If plants had water stress, they would close their stomata to prevent water from dissapating to the air. Evaporating less, leaf temperature increases. In remote sensing, there are some VIs or models. The formal requires reference data, such as VPD which must be site-specific. However, energy balance model enable plants water status to be calculated without any references.
